"Carpaccio", a great resource

continue with the list of fast food taking a third place for "carpaccio" type of preparation meat or fish, now very fashionable in the best restaurants, which comes from the Italian culinary tradition.
Orientals also eat raw fish and meat marinated in sauces, a good example are found in Japanese cuisine.
In English culinary tradition is usually marinated raw anchovies, while desalted uncooked served as an accompaniment to salads or vegetable dishes.

Carpaccio of beef with mushrooms and Parmesan
(15 minutes)

Ingredients for 4 people:


300 g of fillet steak with mushrooms

200 g 70 g flaked Parmesan cheese
lemon parsley


olive oil salt and freshly ground pepper

Make a cut by the butcher very thin slices of fillet steak. At home, clean the mushrooms, rinsed and cut into thin slices, then sprinkle with lemon juice. Dispense in a serving of meat slices, sprinkle over the mushrooms and Parmesan flakes. In a bowl whisk olive oil with a little lemon juice, season to taste and emulsify well. Basting with vinaigrette, sprinkle with chopped parsley and allow to marinate at least 15-20 minutes before serving.
This dish is very pleasant with some rocket scattered over the last minute.
