In ancient Greece spent the summer solstice celebrations of the god Apollo, who represented the sun. The Greeks believed that Apollo, known for its great beauty, each day up to heaven in his chariot pulled by winged white horses to the center of the vault of heaven. The Verbena de San Juan on June 23 as currently held in Spain, one might consider the ancient pagan celebration which has been given a Christian tinge. In this magical night purifying fires are lit and you try to frighten the terrible monsters of darkness with the countless firecrackers.
sweet casserole San Juan
Ingredients for 6 / 8 persons:
1 ½ kg pumpkin
breadcrumbs 250 g 125 g
chopped toasted almonds
75 g hazelnuts, toasted and chopped 15 g
matalahúva
15 g 125 g sesame seed oil 2 eggs
500 g of sugar 1 teaspoon cinnamon
1 clove crushed.
Peel and clean the pumpkin, cut into pieces and put it in a pot. Cover with cold water and let boil until tender. Then the drained, put it in a sieve and let it dry overnight.
The next day we put the pumpkin in a bowl, add the sugar, almonds, hazelnuts, bread crumbs, oil, two beaten eggs, anise, anjojolí, cinnamon and ground cloves and sugar. Mix the dough is smooth and when we put it in an earthenware dish greased with oil or butter. Introducing the cake in preheated oven at 180 º C for 30 - 40 minutes (control doneness before removing from oven.) Out of the clay pot and serve cold.
